Thai Noodle Salad

Ingredients:

Serves 4

Dressing:

  • 1 Red Chilli finely chopped
  • 1 Lemongrass finely chopped
  • 1 Garlic clove finely chopped
  • 1 tbsp sugar
  • Juice of 1 Lime
  • Splash of water
  • Salt

Ingredients for salad:

  • ½ Pack of Rice Noodles
  • 1 Grated Carrot
  • ¼ Red Cabbage shredded
  • ¼ White Cabbage shredded
  • Handful of Fresh Mint and Coriander
  • Handful of Toasted Cashews
  • 2 Scallions sliced

Method:

  1. Soak the Noodles in boiling Water for 8 minutes.
  2. Rinse in cold water, drain and set aside.
  3. Add veggies, dressing and toss.

 

Tip:

Noodles can be very wet after draining. I lay the noodles on a clean tea towel or kitchen paper on a tray before adding to a bowl to dry them so the dressing and flavours don’t get diluted by the liquid.


A peanut dressing would go really well with this salad too.
