Silky Hummus

Ingredients:

  • 400g chickpea (1 tin drained) I use @ktc.foods they are the best. I them buy from @mr.bells.global.food.emporium
  • 1 fat garlic clove
  • 90g Tahini ( 3 big tbsp)
  • 20 ml lemon juice (juice of 1 juicy lemon)
  • 40ml tepid water
  • 1 tsp salt, put less if you are watching salt intake

Method:

  1. Blend everything together for 5-10 minutes if you want it as smooth as possible.
  2. If you think it’s too thick add some more water just be careful not to add too much!

 

Tip:

I top my hummus with seeds, Harrissa, Chipotle.

You can add 1 cooked beetroot and cumin at the start to flavour it.

When we made individual lunches @rootskitchen.catering.cork we were known for our roasted carrot hummus with ras-el-hanout. The same method as above just uses 1 roasted carrot and 1 tsp of ras-el-hanout.
